Whole Grains

Sugar

Though it’s tempting to get your sugar fix from artificial sweeteners, they can leave you running to the bathroom. Longevity-Boosting Recipe

"Egg Whites with blueberry and cinnamon"


Ingredients

3 egg whites

2 tbsp almond milk

1 tsp ground cinnamon

1/4 tsp fine sea salt

1/2 tsp freshly ground black pepper

2 tsp olive oil

1/4 cup blueberries

1 tsp grated lemon zest


Directions

In a medium bowl, whisk together the egg whites, milk, cinnamon, salt and pepper until smooth and frothy.

In a small, nonstick skillet, heat the oil over medium-high heat.

Add the egg white mixture and as it begins to set, use a spatula to life the edges and let the undercooked egg run from the middle to the bottom of the pan.

When the egg whites are set, remove from the heat and slide them onto a plate. Top with the blueberries and sprinkle with the lemon zest

Blood Sugar Solution Recipe

Sesame-Crusted Sole with Baby Bok Choy and Wild Rice

Ingredients
Serves 2
Wild Rice
1/4 cup uncooked wild rice
Pinch of sea salt
3/4 cups water

Sole
1/4 cup sesame seeds
2 (4-oz) skinless sole fillets
2 tbsp sesame oil
2 heads baby bok choy, trimmed
2 garlic cloves, minced
1-inch piece fresh ginger, peeled and grated
Sea salt and freshly ground black pepper

Directions

Make the wild rice: Put the wild rice, salt and water in a medium saucepan and bring to a boil. Reduce the heat, cover and simmer for 50 to 55 minutes.

Make the sole: Place the sesame seeds on a plate. Lightly rub the sole with 1 tablespoon of the sesame oil. Press the sole onto the sesame seeds to form a crust.

Set aside.

Heat a large skillet over medium-high heat. Add the remaining 1 tablespoon sesame oil and swirl it around the skillet to distribute evenly. Carefully lay the sole in the skillet.

Cook the fish until golden brown, approximately 2 to 3 minutes, leaving it undisturbed to ensure a crunchy crust. Using a fish spatula, turn the sole over and brown the other side for 2 to 3 minutes.

The fish should flake apart with gentle pressure when done. Remove the sole from the pan and set on a plate.

Add the bok choy, garlic and ginger to the skillet. Toss well, until the bok choy begins to wilt. Season to taste with salt and black pepper.

Place the bok choy and steamed wild rice on plates and serve the fish on top. Any leftovers can be refrigerated for up to 4 days.

How to Clean It Properly: Remove drawers, if possible. Use a clean sponge or soft cloth and wash the bin with a mild detergent mixed with warm water. Rinse with tap water and wipe dry with a clean towel. To help control odors, use warm water mixed with a baking-soda solution (about 1 to 2 tablespoons of baking soda to 1 quart of water). Rinse and wipe dry, and try to clean monthly.
To avoid cross contamination, separate washed produce from the unwashed and keep it on the top shelf above meats and seafood to avoid raw juices dripping onto it. Keep produce separate in your grocery cart, during food prep, and when using kitchen tools, too.

How to Clean It Properly: First remove any knives stored in the block. Turn the knife block upside down and shake lightly or use a can of compressed air to remove crumbs and other loose debris. Hand wash the knife block in hot soapy water, using a small brush (like a baby bottle nipple brush) to scrub out the knife slots. Rinse thoroughly with clean water.

To sanitize, prepare a mixture of 1 gallon lukewarm tap water with 1 tablespoon of 5.25% household bleach. Either immerse the complete block in the water/bleach mixture or fill the knife slots. Allow the bleach/water mixture to sit in contact with the slots for one minute. Rinse the block and knife slots thoroughly with clean tap water and place the block upside down on a clean surface to dry.
To avoid mold and bacterial buildup, wash knives thoroughly after each use and let them dry completely before placing them in the knife block.
Wash and sanitize the knife block monthly if used frequently.

How to Clean It Properly: If dishwasher safe, place both the container and the lid in the dishwasher and wash after each use. Directions Mix oatmeal with milk and microwave for about 1 minute and 45 seconds. Add milk to desired consistency. Sprinkle with cinnamon and sliced almonds. Use this list of foods, all of which are low to moderate glycemic index foods, to help you structure your meals. A food’s glycemic index indicates how quickly it will raise your blood sugar levels after ingestion. If you eat foods with a high glycemic index, like white bread or foods containing high fructose corn syrup, it rapidly raises your blood sugar. Research has shown that high glycemic index foods worsen your blood sugar levels and increases your risk for obesity. On the other hand, eating foods with a lower glycemic index has been shown to decrease your risk of developing diabetes and heart disease.

You want to make sure each meal contains foods from each of the three vital categories: protein, fiber and healthy fats.

Breakfast Strata


Breakfast Strata
Makes 10 serving, prep 30 minutes
cooking time 10 minutes
Refrigerate overnight, bake at 350 for an hour, Broil 3 minutes,

3 cups small broccoli florets (about 6 ounces)
3 sweet or hot Italian turkey sausage links (about 10 ounces)casings removed.
3 Plum tomatoes, seeded and chopped
3 scallions, trimmed and sliced
1 loaf Italian bread (about 4 ounces) cut into 1 inch cubes
8 Large eggs
4 egg whites
1/4 tsp salt 1 package (10 ounces) 2% white cheddar cheese (such as Cracker Barrel) shredded

1 Bring a large pot of lightly salted water to boiling. Add broccoli and cook for 3 minutes. Drain and set aside.
2. Coat a large nonstick skillet with nonstick cooking spray. Heat over medium-high heat and crumble in h. Cook 5 minutes, breaking apart with a spoon, until cooked through. Add tomatoes and scallions; cook 3 more minutes. Remove from heat.
ck 3. Place bread crumbs in large bowl. In a medium-size bowl, whisk eggs, egg whites, milk and salt. Pour sausage mixture and broccoli florets over bread. Stir to combined. Add egg mixture and 1 /2 cups of the cheese and stir to blend evenly. Coat a large rectangular or oval dish with nonstick spray. Transfer mixture to prepared dish, cover with plastic and refrigerate overnight.
4. Heat oven to 350 degrees. Uncover dish and top with remaining 1 cup cheese. Cover with nonstick foil and bake at 350 degrees for 45 minutes. Uncover and cook 15 minutes more. Increase oven temp to broil and crisp under broiler for 3 minutes. Let rest for 5 minutes before serving.

Vegetable Broth Boost


Give your vegetable broth a boost with this herbal infusion.

Use a tea-ball infuser to enhance the flavor and nutrient content of the
broth without clogging it up with unwelcome little bits of cinnamon or black peppercorn.

Ingredients
4" cinnamon stick
3 tbsp mustard seeds
1 tsp black peppercorns
1 peperoncino, dried
6 cups vegetable broth

Directions
Pour the vegetable broth into a pot and bring to a boil. When the liquid is boiling, toss in an infuser full of the other ingredients. Simmer for 10 minutes.

Dr. Eva's Protien Bars


1.c. Almond Flour
1.c. Almonds sliced
half a c. pecans
half a c. walnuts
4th c. pumpkin seeds
4th c. dried cranberries, blueberries, figs or dates
3 tbs. agave syrup
4th c. cocnut oil
4th c. almond butter
5yh c. shredded cocnut
1 egg
2 tsp. cinnamon

Directions
Combined all ingredients and stir together. The mixture should be clumpy and stick together. Grab a handful of the mixture and mold it into bar form. Place on parchment paper lined baking sheet. Bake in oven at 350 degrees for 11 minutes, let cool and enjoy.

SUPER GRAINS

Its a known fact that "Whole Grain" is better for you than "Multi-Grain". When you read the ingredients, the first word should be "Whole Grain". The reason for the "Multi-Grain" is to only attract consumers, but "Multi-Grain" is just plain flour.

Here is a list of Super Grains you can purchase at either the grocery stores or the natural food stores;

TEFT
It’s the world’s tiniest grain (so small that it can’t be processed or refined) and it is becoming more popular because it’s so versatile. Teff leads the grains in calcium content, which helps strengthen bones and may reduce PMS symptoms. One grain of teff is up to 40% resistant starch, which can help you lose weight if you replace the other carbs you’re filling up on, what I call “carbage” (processed foods like white bread, potato starch, sweets and the like). Teff can be white or dark in color and can be found at your local health food store or online for about $8 per pound. One serving size is about 1/4 cup and 160 calories. Sweater and milder than wheat, teff has a molasses-like flavor. Teff can be cooked hot for a nice breakfast cereal – 1 cup of teff with 2 cups of water or juice, cover and simmer for 20 minutes or until it’s thick and the liquid is absorbed. Add fresh fruit on top. Teff is also available in tortillas for a great wrap or to make quesadillas (a lot better than refined flour tortillas and gluten-free too!).


Millet


Millet is actually popular all around world – in India, it’s ground into their bread. In Africa, they use it in the porridges and to make beer. In this country, a type of millet is used in birdfeed! Millet provides magnesium and B vitamins, two nutrients that have been shown to help reduce muscle/nerve pain like migraine headaches, muscle tension and cramps. Millet is being rediscovered for its possible role in helping control diabetes and inflammation in the body. Millet is a versatile grain that can be prepared like hot cereal, mashed like potato or fluffed like rice. Ground into flour, millet can be used to make dough, pancakes, muffins or bread. Millet can be found in health-food stores bagged. Whole millet costs about $2 a pound. Look for hulled, not pearled – hulled means it’s whole grain and has more fiber

Kamut



This grain is known as the “high energy wheat” – it naturally contains lots of fatty acids and more protein than most grains. It has up to 40% more protein than regular wheat. A half-cup of cooked kamut has more protein than an egg! It also has B vitamins and contains omega-3s, which may help the body fight inflammation. It is also higher in vitamin E than common forms of wheat, which helps keep the immune system strong. Buy kamut in a variety of ways at your local health-food store or in the organic aisle at the supermarket: pastas, flour for baking, breads or the whole grain. Depending on the form of kamut, the cost varies from $2 to $4 per pound. It is most important to look for whole-grain kamut to make sure you’re getting all the nutrients.

Unique Diabetic Bread


I made a couple years ago
unique bread for diabetics. And it actually turned out great. The only thing is that with whole wheat bread, its so much heavier, so filling, you don't have to eat as much.

The ingredients are below;

For a bread machine that will make whole wheat bread;
2 c. Whole Bread no-bleached flour make one whole loaf
half a c. of flax seeds
half a c. of no-salted sunflower seed
half c. Natures trail mix as seen on picture
dash of salt
2 tbs. of yeast
1 and a half tbs. of oil
2 c. and 2 tbs. of water
4 oz. of yogurt
2 packets of sugar substitute

mix into bowl before you place into bread maker, check out pictures below;

I mix the dough in a bowl before placing it into the bread maker. Add at least 1 c. and 2 tablespoons of water with 4 oz. of yogurt and 1 and a half tbs. of canola oil with 2 tbs. of yeast, dash of salt and 2 packets of sugar substitute.


Trail mixture is sweet and has soy beans that are also sweet, (half a c.)


(half a c. each )Flax seeds are sweet tasting and no-salted sunflower seeds


Whole Wheat no-bleached flour

Ginkgo Precautions for Diabetics






"PLEASE READ PRECAUTIONS, MOST DIABETICS ARE UNABLE TO TAKE GINKGO"

SIDE EFFECTS;

Diabetes: Ginkgo might interfere with the management of diabetes. If you have diabetes, monitor your blood sugar closely.

Seizures: There is a concern that ginkgo might cause seizures. If you have ever had a seizure, don’t use ginkgo.

Infertility: Ginkgo use might interfere with getting pregnant. Discuss your use of ginkgo with your healthcare provider if you are trying to get pregnant.

Bleeding disorders: Ginkgo might make bleeding disorders worse. If you have a bleeding disorder, don’t use ginkgo.

Surgery: Ginkgo might slow blood clotting. It might cause extra bleeding during and after surgery. Stop using ginkgo at least 2 weeks before a scheduled surgery.




Ginkgo is an herb. The leaves are generally used to make “extracts” that are used as medicine. However, a few medicines are made from the seed, but these are not well studied.

Ginkgo is often used for memory disorders including Alzheimer’s disease. It is also used for conditions that seem to be due to reduced blood flow in the brain, especially in older people. These conditions include memory loss, headache, ringing in the ears, vertigo, difficulty concentrating, mood disturbances, and hearing disorders. Some people use it for other problems related to poor blood flow in the body, including leg pain when walking (claudication), and Raynaud’s syndrome (a painful response to cold, especially in the fingers and toes).

Ginkgo leaf is also used for thinking disorders related to Lyme disease and depression.

Some people use ginkgo to treat sexual performance problems. It is sometimes used to reverse the sexual performance problems that can accompany taking certain antidepressants called SSRIs.

Ginkgo been tried for eye problems including glaucoma, diabetic eye disease, and age-related macular degeneration (AMD).

The list of other uses of ginkgo is very long. This may be because this herb has been around for so long. Ginkgo biloba is one of the longest living tree species in the world. Ginkgo trees can live as long as a thousand years. Using ginkgo for asthma and bronchitis was described in 2600 BC.

In manufacturing, ginkgo leaf extract is used in cosmetics. In foods, roasted ginkgo seed, which has the pulp removed, is an edible delicacy in Japan and China. Remember, though, the whole seed is LIKELY UNSAFE to eat.

Ginkgo interacts with many medicines. Before taking it, talk with your healthcare provider if you take any medications.



How does it work?

Ginkgo seems to improve blood circulation, which might help the brain, eyes, ears, and legs function better. It may slow down Alzheimer’s disease by interfering with changes in the brain that interfere with thinking.

Ginkgo seeds contain substances that might kill the bacteria and fungi that cause infections in the body. The seeds also contain a toxin that can cause side effects like seizure and loss of consciousness

Acai fruit are incredibly nutritious. Unfortunately, acai fruit are quite rare in greengrocers and supermarkets. But you can often find acai fruit in fruit juice and smoothies.

Egg Sandwich-Open Faced


Servings 4 (1 open-face sandwich each)
Carb. per serving 17g
Prep time 15 minutes

1 cup frozen shelled sweet soybeans (edamame), thawed.


1 small avocado, halved, seeded, and peeled.


2 tablespoons lemon juice

2 cloves garlic, minced

1/2 cup chopped red sweet pepper

4 thin slices firm-texture whole wheat bread, toasted, or
2 whole wheat pita rounds, split in half horizonally

4 hard-cooked eggs, thinly sliced


prep info;

1. In large bowl, combine edamame, avocado, lemon juice, garlic, and 1/4 teaspoon salt(optional), use a fork or potato masher to mash ingredients together until avocado is smooth and edamame is coursely mashed. Stir in sweet pepper.

2. Spread edamame mixture on top of bread slices or on pita halves. Arrange egg slices on edamame mixture. Sprinkle with black pepper.

Salt with a Bad-Boy Reputation




Salt has long had a bad-boy reputation. Even people with normal blood pressure are aware of the link between sodium-a primary component of table salt- and hypertension(high blood pressure). About two out of three adults with type 2 diabetes also have hypertension, which raises the risk of diabetes complications such as heart disease, stroke, eye disorders, and kidney problems.

How much is TOO much?

In general, healthly adults under the age 50 should limit daily sodium intake to 2,000 milligrams, the equivalent of a teaspoon of salt. But the U.S Government and some health groups are discussing whether a lower limit would be better. In 2009, the Centers For Disease Control and Prevention reported that 70% of adults would benefit from limiting their daily sodium intake to 1,500 milligram.

Some experts, however, don't believe it's necessary or practical for most people to restrict sodium to less than 2,300 milligrams a day. And sodium isn't the only factor in hypertension. Although many people find their blood pressure going up with age, many people also gain weight as they get older, which contributes to hypertension.

HOW SODIUM MEASURES UP;

49ers a 28-24 Victory



49ers takes brawl in the Bay

Bruce Gradkowski and David Carr left no doubt about who the quarterbacks will be on their teams.

Gradkowski threw for 202 yards and two touchdowns after Jason Campbell left with an injury for the Oakland Raiders, and David Carr led a late touchdown drive that gave the San Francisco 49ers a 28-24 victory Saturday night in the annual Battle of the Bay.

Campbell left the game in the second quarter after being hurt on a sack. Campbell was down for about 5 minutes before leaving in the passager seat of a cart with what the team described as a stinger. There was no word on other information available during the game.

But Gradkowski once again proved more than capable as a back-up. After breathing life into Oakland's offense last year when he took over the reins from JaMarcus Russell, Gradowski was once again relegated to back-up status after the Raiders acuired Campbell in the offseason.

Gradowski did not play in the first two exhibition games because of a groin injury and was in danger of falling behind Kyle Boller on the depth chart. But he completed 14-22 passes and led Oakland to scores on his first three drives. He threw touchdown passes to Louis Murphy and Zach Miller and set up a 57-yard field goal by Sebastain Janikowski.

That wasn't enough to win as the Niners put together a 16-play, 80-yard drive to win it. After a slow start, Carr did just enough to win it on that drive. The biggest play might have been Carr's 5-yard run on third-and-3. Carr leaped in the air and was spun around like a helicopter after being hit by a defenser a week after Nate Davis went down shy of the marker on a similar play.

Anthony Dixon pushed it up the middle on the third-and-goal from the 1 to give the Niners the lead with 1:44 remaining. Carr's pass to Nate Byham for the two-point conversion made it 28-24.

Todd Watkins dropped a deep pass inside the 5 on the fourth down to end Oakland's hopes at comeback.

Frank Gore ran for 58-yards on two carries in his first action of the preseason for the Niners, Alex Smith threw a touchdown pass and rookie Phillip Adams scored on an 83-yard punt return as San Francisco remained undeated in the preseason.

Sugar free Fruit Pops




Servings 8
Carbs. per serving 17g or 14g
Prep time 25 minutes
Freeze 5 to 6 hours


2 tablespoons splenda
2 cups seedless watermelon cubes
8 5 ounces paper cups
8 wooded froozen dessert sticks
8 kiwifruits, peeled and cut up.

1. in a small bowl, stir together 1/4 cup water and sugar until dissolved. In a blender, combined watermelon cubes and 1 tablespoon of the sugar-water mixture. Cover and blend until very smooth. Divide mixture amount paper cups. Cover tops with foil. Cut a slit in the center of the foil on each cup; Insert a wooded stick in each slit. Place cups on a small baking sheet. Freeze 1- 2 hours or until thick and slushy.

2. In the blender, combined kiwifruits and the remaining sugar- water mixture. Cover and blend until very smooth. Remove foil from paper cups. Pour Kiwi mixture evenly over watermelon layer in cups. Freeze at least 4 hours or until completely solid.

3. To serve, peel paper from pops. Splenda (choose Splenda granular) Equal spoonful or packets, or Sweet "N Low bulk or packets. Follow package directions to use product amount equivaent to 2 tablespoons sugar.

Per pop; 70 calories, 0 fat, 2g fiber, 1g protien.
Exchanges; 1 fruit, carb choices: 1.

Per pop with substitute; same as abover, except 59 calories, 14 g carbs.
